Our explorer named this blend South Passage because it harmonizes coffee from both South America and Africa.
South Passage is a light to medium roast which makes it ideal for all kinds of pour over brewing methods and moka pots. We recommend drinking this coffee black so you can really appreciate the medium body and acidity while tasting the sweet and fruity notes.
The highlight coffee seed in this blend is the La Cabana Colombia Honey which brings the raisin like sweetness with it. We are proud to use this seed which is Rainforest Alliance certified.
Honey Process - 'honey' is a term used for the mucilage left on the beans after the skin and pulp are removed. Honey process is slightly different to natural where the entire cherry (skin, pulp, mucilage) is left on the bean and left to dry. The honey process removes the skin and pulp and leaves some mucilage on the beans. So when these beans are left to dry out on raised beds they retain some acidity from a short fermentation peiod.
